Eating Green Seminar is March 16

Individuals wishing to improve their diets may prepare for St. Patrick’s Day by participating in an Eating Green Seminar being offered by the Family and Consumer Science Department at Chadron State College on Friday, March 16.

The seminar may be taken for one hour of either undergraduate or graduate credit. It will take place in the Burkhiser Technology Center from 9 a.m. to 5 p.m. Some on-line activities will follow in the next month.

The instructors will be Dr. Norma Nealeigh and Jay Sutliffe, both CSC professors. One of the activities on the 16th will be preparing and eating a lunch built around “green” foods.

“We will explain the whys and hows of putting more green in your diet,” said Nealeigh. “And, ‘green’ is a whole lot more than salad and beans. The seminar is intended to help participants make informed choices about the food they eat, no matter what the current state of their diets may be.”

Nealeigh added that the on-line activities will include some reading, answering questions on a discussion board and a project or paper, but will not involve major research.

“And we won’t police your diet afterwards,” Nealeigh added.

The cost will be $147 for undergraduate credit and $174 for graduate credit. The registration should be completed through the CSC Registrar’s Office in Crites Hall. The telephone number is 308-432-6221.
